Peanut Sauce

200mlcoconut milk

100mlwater

2 Tbsppeanut butter

1 ½ Tbspred curry paste

½ Tbspsoy sauce

2 tsplime juice

½ tsppaprika

Step 1
Add dry couscous into a saucepan, then pour in the vegetable stock.
Step 2
Bring to a simmer until liquid has been absorbed, about 8-10 minutes.
Peanut Sauce
Step 3
Add all ingredients into a hot saucepan. Stir gently to combine. Allow mixture to come to a simmer.
Step 4
Add in carrots and capsicum and cook for a few minutes.
Step 5
Add in prawns and bok choy. Cook for a further few minutes or until liquid has thickened to desired consistency.
Serving
Step 6
Divide couscous between bowls. Top with sauce mixture. Sprinkle over the spring onion and chilli flakes.
