Instructions
Step 1
Toast the slices of bread to desired crispiness.
Step 2
Bring a pot of water to a boil, then boil the eggs.
Step 3
Scoop out avocado flesh into a small bowl. Add in the lemon juice and mayonnaise, then season with salt and black pepper. Mash using a fork. Once mashed, mix through.
Step 4
Peel and chop the boiled eggs once cooked, then add to the bowl.
Step 5
Spread over the bottom bread slices. Sprinkle with seasoning and top with sprouts. Cover with other bread slice and serve.
