1 cupbasmati rice
or long grain, rinsed

2 cupschicken stock
hot, or veg

1 Tbspolive oil

1onion
small, finely chopped

1 clovegarlic
minced

½ tspground cinnamon

½ tspground cumin

¼ tspturmeric
for golden colour

1Zest of lemon

50gpine nuts
toasted, or slivered almonds

2 Tbspfresh parsley
chopped, or mint

dried apricots
Optional, chopped, or sultanas for sweetness
Instructions
Step 1
1. Soften onion & garlic
Step 2
• On the simmering plate, heat the olive oil in a lidded saucepan.
Step 3
• Add onion and garlic, cooking gently until soft and sweet (about 5 minutes).
Step 4
2. Add spices

• Stir in cinnamon, cumin, and turmeric. Let them sizzle for 30 seconds — this wakes up their aroma.

3. Toast the rice

• Add the rinsed rice and stir so every grain is coated in the spiced oil and onion mix.

4. Add stock & boil
Step 9
• Pour in the hot stock, add the lemon zest, and stir once.
Step 10
• Bring to a vigorous boil on the boiling plate.

5. Cover & cook
Step 12
• Once boiling, put the lid on tightly and move to the simmering plate for 10 minutes (white rice) or 20 minutes (brown rice).

6. Rest

• Transfer to the warming plate or the floor of the simmering oven for 5 minutes.

7. Finish & serve

• Fluff with a fork, stir through the toasted nuts, fresh herbs, and dried fruit (if using).

• Serve warm with lamb, roasted vegetables, or grilled halloumi.
