Ingredients
6 servings
For salad
1english cucumber
1 pintcherry tomatoes
or grape tomatoes
1bell pepper
½ cupred onion
chopped
½ cupkalamata olives
green olives, or a combo
½ cupfresh herbs
I use fresh dill, parsley, and mint
4 ozfeta cheese crumbled
For dressing
Instructions
Step 1
Chop the veggies, herbs, & olives. I prefer to chop everything into small pieces, but some people prefer larger chunks. Either is fine.
Step 2
Combine the dressing ingredients in the bottom of a large mixing bowl and whisk until emulsified.
Step 3
Add the vegetables, herbs, olives, and crumbled feta cheese to the bowl with the dressing and toss.
