Traybake Cauliflower curry

This is one of those meals that I like to use to clean out any vegetables that are about to go bad so it’s different every time I cook it. But the general gist is that you bake your hard veges (anything that takes a while to cook) for 30 mins, then add a jar of simmer sauce, a tin of legumes, softer vegetables and 2 cups of stock and bake for another 20-30 minutes or so until everything is nice and soft. Sooo easy!

Instructions

Step 1
Preheat oven to 200C/180C fan/gas 6.
Step 2
Add cauliflower and cherry tomatoes to a deep baking tray.
Step 3
In a bowl add 1/4 cup of veggie stock, curry powder, garlic powder, chilli flakes and black pepper and mix. The pour over cauliflower and tomatoes and toss to coat them in the spice mix.
Step 4
Add baking tray to oven and bake for 20 mins.
Step 5
While the veggies are cooking combine the 2 cups of stock, the drained and rinsed legumes and the simmer sauce in a jug or bowl (I tend to use the same one I made the previous spice blend in.. cos yes lazy).
Step 6
After 20 minutes remove the tray from the oven and scatter over the 1.5 cups of soft veggies (in my case the frozen vegetables). The pour over the legume sauce mix and stir.
Step 7
Add back to oven and cook for another 30 minutes or until soft.
Step 8
Eat eat! I like it with cauliflower rice, which is a bit of unhinged cauli on cauli action but each to their own :)
