Instructions

Step 1
1. Preheat oven to 170°C fan. Line tray with baking paper.
Step 2
2. Blend cottage cheese until completely smooth.
Step 3
3. Mix powdered peanut butter + 25g water into a smooth paste.
Step 4
4. In a bowl combine almond meal, protein powder, baking powder and salt.
Step 5
5. Add egg, blended cottage cheese, PB paste and vanilla. Mix into thick dough.
Step 6
6. Fold through choc chips.
Step 7
7. Chill dough 15–20 mins (important for structure).
Step 8
8. Divide into 8 cookies, flatten gently.
Step 9
9. Bake 9–11 mins until edges are set but centres still soft.
Step 10
10. Let cool fully on tray — they firm up as they cool.
