Incredibly flavorful Indian-style scrambled eggs (Bhurji) made in just one pan. Caramelized onions, toasted spices in ghee, juicy tomatoes, and soft eggs. Cheese is optional (not traditional but delicious as shown in the video).

Ingredients

1 tablespoonghee
1red onion
small, finely diced
½ teaspooncumin seeds
2green chili
2 teaspoonginger-garlic paste
1 teaspoongaram masala
¼ teaspoonturmeric powder
1 teaspoonkashmiri red chili powder
¾ teaspoonSalt
to taste, divided
2tomatoes
medium, chopped, be generous for saucy texture

3 tablespoonsfresh cilantro

Instructions
Step 1
Heat the ghee in a large pan over medium heat for 1 minute until it melts and starts sizzling.
Step 2
Add the diced red onion and cook for 4–5 minutes, stirring occasionally, until caramelized and softened.
Step 3
Add the cumin seeds and toast for 30 seconds until fragrant and aromatic.
Step 4
Stir in the chopped green chili and cook for 1 minute on medium heat.
Step 5
Add the ginger paste and garlic paste; cook for 30 seconds until fragrant.
Step 6
Stir in the garam masala, turmeric powder, Kashmiri red chili powder, and a pinch of salt. Toast the spices for 20–30 seconds to bloom the flavors.
Step 7
Add the chopped tomatoes and cook for 4–5 minutes, stirring frequently, until they break down and become soft and mushy.
Step 8
Meanwhile, crack the 6 eggs into a bowl, add a pinch of salt, and whisk well.
Step 9
Pour the whisked eggs into the pan with the onion-tomato mixture. Reduce heat to low and gently scramble for 3–4 minutes until the eggs are softly set but still moist (do not overcook).
Step 10
Turn off the heat and stir in the chopped fresh cilantro.
Step 11
Optional: Sprinkle grated cheese on top while hot and let it melt slightly.
