Instructions

Step 1
Place first 4 ingredients in a pot and heat to simmer. Add the chicken breast and let pot simmer until chicken cooked through. Remove chicken to shred and pop back in pot. (I prefer to use left over chicken as I find when the chicken cooked this way it's touch and difficult to shred)

TO SERVE:

Step 2
Place soup in bowls and top with fresh tomatoes, sour cream, grated cheese, crushed nacho chips and salt & pepper.
