Italian Grinder Pasta Salad

Everything you love about an Italian grinder sandwich in a pasta salad! Loaded with tons of toppings and a creamy dressing - this is a delicious salad for the season!

Instructions

Step 1
Bring a large pot of water to a rolling boil. Add a generous amount of salt to the water.
Step 2
Add the rotini pasta and boil until 1 minute before al dente- about 7 minutes. Drain and rinse with cold water to stop the cooking process. Let the pasta cool completely.
Step 3
Thinly slice the pepperoni and salami into thin strips. Cube the provolone cheese, ham and turkey into small pieces. Cut the red onion into quarters then thinly slice it.
Step 4
Thinly slice the head of iceberg lettuce then roughly chop. Wash and dry the lettuce.
Step 5
Make the dressing by combining 1.5 cups mayonnaise, 1/3 cup red wine vinegar, juice of 1 lemon, 2 cloves minced garlic, 2.5 tsp salt, 2.5 tsp black pepper and 1 tbsp of oregano. Mix well to combine.
Step 6
Place the cooked pasta in a large bowl and top with the sliced provolone, pepperoni, salami, ham, turkey, red onion and iceberg lettuce. Add the 1/3 cup sliced pepperoncini peppers. Top with the dressing.
Step 7
Toss together all of the ingredients and enjoy!
