Instructions

Step 1
Smashed avocado - Use a fork to roughly mash the avocado inside the avocado skin (why dirty a bowl?!). Lumps are fine! Just make it spreadable. Set aside.
Step 2
Hot tomato relish - Heat the oil in a medium non-stick frying pan over high heat. Add the onion, tomatoes, salt, pepper and vinegar. Cook, stirring regularly, for 3 minutes or until the tomatoes are lightly blistered, wrinkled and starting to collapse. Slide into a bowl.
Step 3
Toast bread - Return the pan to the heat. Butter the buns, then put them cut-face down in the pan. Cook for 1 minute or until golden. Transfer to serving plates.
Step 4
Fry Haloumi - Heat the oil in the pan. Add the haloumi and cook each side for 1 ½ minutes or until deep golden. Transfer to plate.
Step 5
Assemble - Slather the base of the buns with avocado. Sprinkle with a pinch of salt. Pile on the spinach, top with Haloumi, then the tomato relish. Top with the bun lids and enjoy!
