Instructions
Step 1
In a bowl, add 1 lb ground beef, 1/2 tsp each salt, pepper, onion powder, and 2 tbsp Worcestershire sauce. Mix with hands and add about 1/4 cup to a small tortilla, pressing until meat is even and flat.
Step 2
To a hot skillet, place tortilla meat-side down. Cook for 3 minutes, flip, cook for another minute, and then remove from heat. Repeat until all tacos are cooked.
Step 3
While cooking, mix together drained corn, diced red bell pepper, diced red onion, diced jalapeño, crumbled cotija, and chopped cilantro.
Step 4
For the dressing, mix together Greek yogurt, lime juice, chili powder, cumin, smoked paprika, salt, and pepper. Pour over corn and mix until well coated.
Step 5
Top each taco with corn mixture and sprinkle with more cilantro and cotija cheese.
