Instructions
Step 1
1. Blend the oats for 20–30 seconds until they look like flour.
Step 2
2. Add the egg, Greek yogurt, baking powder, cinnamon, vanilla, and sweetener.

3. Blend again until smooth.
Step 4
4. Let the batter rest for 5–10 minutes. This lets the oat flour absorb moisture and makes thicker, fluffier pancakes.
Step 5
5. Heat a non-stick pan over medium-low heat for 2–3 minutes. (Do not put the heat too high or the outside burns before the inside cooks.)
Step 6
6. Pour the batter into 3–4 small pancakes rather than one giant pancake—easier to flip.
Step 7
7. Cook about 2–3 minutes on the first side, until the edges look dry and small bubbles appear.
Step 8
8. Flip carefully and cook another 1–2 minutes.
