Instructions
Step 1
Place a steel pan in low heat until non-stick.
Step 2
Cut the onions and garlic cloves in small pieces.
Step 3
Once the pan is hot enough (not too hot), add a little avocado oil in the pan, tilt the pan to cover the whole bottom.
Step 4
Add the onion and garlic in the pan. Mix and leave in low heat.
Step 5
Cut in small pieces the pepper and the tomato and add to the pan. Mix.
Step 6
Wash the spinach and squeeze to drain. Add to the pan alongside the herbs and spices. Mix.
Step 7
Blend together the tofu (without squeezing), lemon juice, chickpea flour, beetroot juice, turmeric, and salt. Add to the pan. Mix.
Step 8
Keep on adding a little water at a time and mix at intervals for about 5 mins. Cover with a lid, leave a little gap for the air to escape.
