Instructions
Step 1
Cook chicken: Toss diced chicken with seasonings and oil. Cook in a pan over medium-high heat until golden and cooked through (about 6–8 minutes).

2. Make street corn salad: Mix corn, red onion, jalapeño, Greek yogurt, mayo, cheese, cilantro, garlic powder, lime juice, tajín, salt, and cayenne.

3. Cook rice: Prepare basmati rice according to package. Once done, stir in lime juice, salt, and cilantro.

4. Make sauce: Mix Greek yogurt, mayo, lime juice, cilantro, and salt.

5. Assemble bowl: Layer rice, chicken, street corn salad, and drizzle with creamy cilantro sauce.
