One of the recipes I can eat all summer! Fresh, garlicky, tangy.. Beautiful and so easy to make! I love ricotta, so this recipe has a fun twist! You can go with or without!!

Step 1
1. Add the diced tomatoes, garlic, basil, olive oil, balsamic vinegar, salt and pepper to a bowl. Mix everything together and let it sit for about 15–30 minutes so all those flavors can come together.

2. Slice the baguette and place the pieces on a baking sheet. Brush them lightly with olive oil and bake at 400°F for 7–10 minutes, flipping halfway through, until they’re nice and crispy.

3. When the bread comes out, rub a cut garlic clove over each warm piece. Don’t skip this because it makes SUCH a difference.

4. Spread a nice layer of ricotta directly onto each piece of toasted bread.
Step 5
5. Give the tomato mixture another stir. If there’s a ton of liquid at the bottom, drain a little off. Scoop the tomatoes right on top of the ricotta.
Step 6
6. Finish with a little extra basil, black pepper or balsamic glaze if you want. Serve them right away while the bread is still crispy.
