Street Corn Chicken Orzo

466 cals 43g protein 15g fat 40g carbs Ingredients: this makes 6 meals 2 lbs boneless, skinless chicken breast, diced 8 oz dry orzo 1 can Del Monte Mexican Style Street Corn, drained 1 small red onion, diced 4 garlic cloves, minced 1 (4 oz) can diced green chiles 2 cups chicken broth 1 tbsp olive oil 8 oz reduced-fat cream cheese, softened ½ cup crumbled cotija cheese, divided Juice of 1 lime ¼ cup fresh cilantro, chopped Tajin, measure with your heart Street Corn Seasoning Blend: 1½ tsp chili powder 1 tsp smoked paprika 1 tsp garlic powder 1 tsp onion powder 1 tsp cumin ½ tsp black pepper ¼ tsp salt ¼ tsp cayenne, optional Directions: 1. Preheat oven to 400°F. 2. Add the dry orzo, diced raw chicken, drained street corn, red onion, garlic, green chiles, olive oil, street corn seasoning blend, and chicken broth to a deep 9x13 baking dish. Mix well, making sure the orzo is mostly submerged. 3. Cover tightly with foil and bake for about 40 minutes, or until the orzo is tender and the chicken reaches 165°F internally. 4. Remove from the oven and, while hot, stir in the cream cheese, ¼ cup cotija, and lime juice until smooth and creamy and then top with tajin 5. Stir in most of the cilantro. 6. Top with the remaining cotija, extra cilantro, and an optional sprinkle of tajin 7. Divide evenly into 6 meal-prep containers and enjoy! Instructions
