Instructions
Step 1
1. Set your oven to 200C.
Step 2
2. Drain and rinse your chickpeas. Spread them onto a baking tray and season with spices. Bake until super crispy.
Step 3
3. Boil your cashews for 10 minutes (you don't need to do this if you have a high speed blender). It makes it easier to blend them. Add all the ingredients for the dressing to a blender and blend until smooth. Add more plant milk until desired consistency is reached.
Step 4
4. Chop up lettuce and red onion.
Step 5
5. When the chickpeas are ready, assemble your salad and enjoy!
