For the chicken

½ cupflour
1 tspcorn starch
½ tspbaking powder
2 tsppaprika
1 tspblack pepper
1 tspgarlic powder
1 tspcayenne pepper

For the waffles
1 cupflour
3 Tbspsugar
½ tspsalt
1 tspbaking powder
1 tspvanilla extract
1 cupbuttermilk
½ cupwhole milk
2 Tbspunsalted butter
melted
For the buffalo sauce

Instructions
For the peaches
Step 1
Pit and dice the peaches (no need to peel)
Step 2
Add lemon juice, brown sugar, honey, and water and bring to a boil over high heat for 4-5 min, stirring often.
Step 3
Cover the saucepan and lower the heat to a simmer, stirring occasionally and check consistency of the peaches.
Step 4
Add water for thicker consistency, cook to desired doneness (roughly 20 min)
For the chicken
Step 5
Pat dry chicken thighs with a paper towel.
Step 6
In a medium bowl, combine buttermilk, egg, and salt
Step 7
In a separate medium bowl, combine flour, corn starch, baking powder, paprika, cayenne pepper, garlic powder, and black pepper.
Step 8
One a time, dunk the chicken thighs in the wet mixture, and then into the dry mixture, covering the chicken completely in a thin layer of flour mixture. Set aside.
Step 9
Heat a shallow level of frying oil over medium heat in a large skillet or deep sided pan.
Step 10
One oil is hot, place dredged chicken in a single layer in the skillet or pan. Flip frequently and until the chicken reaches an internal temperature of 165 degrees F.
Step 11
Place fully cooked chicken on a paper towel-lined plate.
For the waffles
Step 12
In a large bowl, combine flour, sugar, salt, baking powder. Whisk until fully combined.
Step 13
In same bowl, add buttermilk, milk, melted butter, egg whites, and vanilla extract. Whisk until smooth.
Step 14
Preheat a waffle iron and cook waffles to desired doneness.
For the buffalo sauce
Step 15
Melt butter over low heat.
Step 16
Once completely melted, slowly add hot sauce and stir to combine. Keep adding hot sauce for desired heat level.
Step 17
Turn heat down to lowest setting.
For the eggs

Fry each egg (sunny side up) to desired doneness
To plate (for each plate)
Step 19
Place a single square waffle (or two stacked if smaller) on a plate.
Step 20
Spoon peach compote on top of the waffle.
Step 21
Using tongs, dunk a fried chicken thigh into the buffalo sauce to completely cover. Place chicken on top of the peaches.
Step 22
Place a fried egg on top of the chicken.
Step 23
Sprinkle arugula on top of the egg.
Step 24
Drizzle maple syrup (and optionally some of the buffalo sauce) on top of everything.
