Whole Wheat Pancakes

Light and fluffy pancakes made with freshly ground wheat. (I added spinach to see if it would work.) (recipe from Heather Kidd)

Instructions

Step 1
In large bowl, sift flour with baking powder, salt, and sugar.
Step 2
Separate eggs.
Step 3
In medium bowl, beat egg yolks with chopped spinach.
Step 4
Beat milk, oil, and honey into egg yolks.
Step 5
Combine the milk mixture with the dry ingredients until just blended.
Step 6
Beat egg whites until stiff peaks form.
Step 7
Fold egg whites into mixture.
Step 8
Cook on greased griddle.
