Ingredients

4boneless chicken thighs
cut into chunks
1 handfullime
fresh coriander
1 heaped tbspThai red curry paste
1 Tbspsweet chilli sauce
1red chilli
small, sliced
1 tsppeanut butter
1 tspsriracha
3spring onions
chopped
300gegg noodles
or rice
350mlchicken stock
hot
salt
pepper
chilli oil
peanuts
fresh coriander
lime wedges
to serve
Instructions
Step 1
1 Place all the ingredients, except the noodles and stock, in the slow cooker, stir and season to taste. Cook on high for 2¾ hours. Add the noodles and stock, stir and cook for another 20 minutes, stirring after 10 minutes. Garnish with chilli oil, chopped nuts and coriander with lime wedges on the side for squeezing.
