Instructions

Step 1
1. Heat olive oil in a pot and add garlic. Saute for 1 minute.

2. Add spinach, curry powder, garam masala, and turmeric. Cook until spinach is wilted.

3. Add vegetable broth, coconut milk and lentils.
Step 4
4. Grate ginger into mixture and simmer for 30 minutes or until lentils are cooked through and sauce has thickened.
Step 5
Serve with white rice.
