Instructions
Step 1
Heat a large pan over a Medium heat and add olive oil, garlic, red onion and pepper. Fry for a few minutes.
Step 2
Add the beef, brown for a few more minutes
Step 3
Add the rice, chopped tomatoes, stock and mexican seasoning.
Step 4
Cover with lid and simmer for 15 mins, until rice is cooked and water is absorbed.
Step 5
Once cooked, add cheese, stir it in to melt.
