Instructions

Step 1
Preheat oven to 425 degrees. Dice the sweet potato and lay on a baking sheet. Drizzle honey over the potatoes and mix around well for an even roast. Roast in the oven for 15-20 min or until soft
Step 2
Cook rice as directed
Step 3
Dice cucumber and tomato. Combine into a bowl and add the zest of 1 lemon. Cut the lemon in half and add half it’s juice and save the other half. Season with thyme, garlic powder, salt, and pepper to taste. Set aside
Step 4
Dice chicken breast and season with rosemary, garlic, salt, and pepper. Cook in pan with oil and the juice from the other lemon half.
Step 5
Combine cooked rice, chicken, spinach, sweet potato, cucumber salad, hummus, tzatziki, olives and avocado into a bowl. Top with feta and serve. Can also be served with a slice of pita
