Instructions
Step 1
Chicken prep: Remove excess skin from the chicken. Cover and massage the chicken with salt. Rinse chicken with water.
Step 2
Place chicken in large pot and cover with water. Bring to boil and skim any scum.
Step 3
Once boiling, reduce heat to simmer. Add green onions, garlic cloves and ginger. Season with salt and simmer for 30 min.
Step 4
Rice prep: add oil to pan, add minced ginger, minced shallot and minced garlic. Season with salt, saute until softened.
Step 5
Wash rice and add it to the pan, saute for 30s, stirring often. Remove and add to rice cooker (or another pot).
Step 6
Once chicken is finished, add broth to rice and start cooking. Chicken into ice bath, then rub with sesame oil and set aside.
Step 7
Once rice finishes, break down chicken, plate and enjoy.
