Instructions

Step 1
Preheat oven to 375 degrees. Grease your doughnut pan.
Step 2
Gently mix dry ingredients in a bowl with a whisk.
Step 3
Cream the maple syrup with the palm shortening in another bowl.
Step 4
Add all of the wet ingredients to the dry ingredients, and stir gently to combine and moisten the dry ingredients.
Step 5
With a hand mixer, blend until all ingredients are well combined and you can no longer see any obvious banana chunks.
Step 6
Spoon batter into doughnut pan. Bake at 375 for 23-28 minutes, varies based on your doughnut size. Doughnuts will be browned and firm to touch.
Step 7
Allow to cool for 10 minutes. Move to cooling rack.
Step 8
Gently melt the coconut butter, and combine with the maple syrup. Drizzle over still-warm doughnuts (or in my case smoosh haphazardly onto cold doughnuts because you were distracted by an adorable poodle begging for attention). Sprinkle with coconut sugar to garnish. I sometimes skip the maple syrup in this step and simply drizzle the melted coconut butter and garnish with coconut sugar.
