Step 1
Combine eggs and heavy creamy, then whisk until beaten and combined.
Step 2
Mix cabbage, bell pepper, and red onion in with your egg mixture.
Step 3
Heat a skillet over medium heat and coat with cooking spray. When hot, pour half egg mixture into pan and cover. Occasionally remove the lid and ensure the egg mixture is beginning to firm up equally on all sides.
Step 4
Once the egg mixture is still slightly wet but mostly firm, add half shredded cheese over the top and allow time to melt. Once cheese is melted, add half the leftover Carnitas and cover until warm.
Step 5
Once the carnitas are warm and the cheese is melted, fold the omelette in half and slide onto a plate. Repeat steps 3-5 using the rest of the egg mixture, cheese, and carnitas.
