Step 1
1. Preheat the oven to 190C (fan) and line a baking tray with parchment paper.

2. Drizzle 1 teaspoon of honey in one spot on the parchment paper and spread it slightly.

3. Arrange the raspberries upside down in two rows, placing 6 raspberries in total.
Step 4
4. Stuff each raspberry with a hazelnut.

5. Divide the puff pastry into 12 equal squares.

6. Cover the stuffed raspberries with one square of pastry and press the edges down to seal. Repeat with the remaining raspberries, honey, hazelnuts and pastry squares.

8. Combine the egg yolk with the milk and brush it over the pastry. Bake for 12-15 minutes or until the pastry is golden.

10. Once baked, let the puffs cool, then turn them upside down and dust them with icing sugar.
