Step 1
Peel the pumpkin, remove the seeds and cut the pumpkin in small pieces.
Step 2
Boil in a pan with water and a teaspoon of salt until done.
Step 3
Meanwhile, mix all the dry ingredients together.
Step 4
Mash the pumpkin pieces with a stick blender.
Step 5
Add the other ingredients and mix. The batter should be thick like American pancakes. Heat some oil in a skillet and use 1 big tablespoon batter per pancake. This recipe will be enough for at least 30 small pancakes.
Step 6
Bake both sides until golden brown and serve with some maple syrup or sugar on top. Enjoy!
