For the dressing

Step 1
Air fry your frozen veggie samosas for 7 minutes at 375°
Step 2
In a small pan over medium heat, roast your garlic and shallots with a bit of olive oil. Stir often so it doesn’t burn. Let cook for 5 minutes
Step 3
Chop your veggies and assemble the salad
Step 4
Chop the mint and parsley and add it to the garlic and shallot mix. Let it cook for 30 seconds then remove from heat.
Step 5
Pour the mint, parsley, garlic, and shallot into a small jar. Add olive oil and some honey. Mix.
Step 6
Pour dressing over the salad! Add your samosas (I cut them before serving). Enjoy!
