Easiest ever dhal
I love dhal, delicately spiced and oh-so comforting. Over the years I’ve simplified my favourite dhal recipe (mainly due to being too hungry, or too lazy to wait for it to cook!). I hope you love this 30-minute, one-pot recipe too! Top with cheat’s pink pickled onions for a tangy, colourful finish.
EASY TIP Use this as a basic recipe for dhal variations, including adding carrot and coriander, caramelized onions or spinach. Let your flavour imagination run wild!

Ingredients
4 servings
300gdried red lentils
2 Tbspmedium curry paste
ensure dairy-free
ground turmeric
ground cumin
dried chilli flakes
1 litrevegetable stock
hot
1 x 400mlcan of full-fat coconut milk
1unwaxed lime
zest and juice of
2 Tbspcoconut yogurt
sea salt
generous
Instructions
Step 1
1 Add the lentils to a large pan, along with the curry paste, turmeric, cumin, chilli flakes and vegetable stock. Bring to the boil over a high heat, then simmer for 20 minutes, stirring frequently.
Step 2
2 Pour in the coconut milk and cook for a further 5–6 minutes, stirring constantly, until the lentils break down and become creamy.
Step 3
3 Remove from the heat and stir through the lime zest and juice. Season to taste with sea salt, then stir through the coconut yogurt.
