Instructions
Step 1
Heat the oil in a large skillet over medium high heat.
Step 2
Add the onion and garlic and cook for 2 minutes, or until the onion is slightly soft.

Add the peppers and cook for another 2 minutes, or until the onion is translucent.
Step 4
Add 1 cup of the broth and cook for another 15 minutes.
Step 5
Put the mixture in a blender and blend until smooth, adding another cup of broth as needed, and blending for about 1 second.

Pour the mixture into a large saucepot.
Step 7
Add the remaining broth and the tomato sauce.
Step 8
Simmer for 20 minutes over low heat to let the flavors combine.
Step 9
Season with salt and pepper to taste.
Step 10
Just before serving, stir in the lime juice.
Step 11
Top each serving with 1 tablespoon of sour cream and the lime zest for garnish, if using.
