Classic chili recipe with plenty of red meat

Ingredients

For Chili

1 LbsGround Beef Lean

1 LbsStew Beef

2 x 14.5 ozCans Diced Tomatoes
w/ green chilies

3 x 8 ozCan Tomato Sauce

1 x 15 ozLight Kidney Beans
Can, Rinsed

1 x 15 ozCan Dark Kidney Beans
Rinsed

2cloves garlic

1 BulbYellow Onion

2 Tbspchili powder

2 ½ tspcumin

2 tsppaprika

1 tsporegano

2bay leaves

salt
to taste

black pepper
to taste

¼ tspcayenne
For Serving
Instructions
Step 1
Cut stew meat into small, bite-sized pieces.
Step 2
Heat olive oil in a large skillet over medium heat.
Step 3
Add onion and saute 3 minutes, then add garlic and saute 30 seconds or until fragrant. Then pour it into your pot.
Step 4
Return skillet to medium-high eat, add beef cubes and brown all sides.
Step 5
Drain any liquid except about 2 table spoons. Pour the meat into your pot.
Step 6
Repeat with ground beef.
Step 7
Add diced tomatoes, tomato sauce, chili powder, cumin, paprika, salt & pepper to taste. Stir mixture, cover with lid and cook on low heat for 2 hours.
Step 8
Drain and rinse kidney beans. Stir them into the chili and allow to heat through, about 10 minutes.
To Serve
Step 9
Dice jalapeños and red onion. Slice limes
Step 10
Serve with sour creme, cheese, onion, jalapeño, and a fresh lime slice.
