Instructions
Step 1
Cut your chicken into bite size pieces and slice your vegetables up and put aside for later.
Step 2
Have your roasted garlic in a bowl and mix with salt, pepper, Italian seasoning and cayenne pepper. When mixed add it to your chicken and mix it so chicken is covered nicely!
Step 3
Get your rice going
Step 4
Now that everything is cut and seasoned add butter and chicken to a big pan or pot and cook. When the chicken is almost done add your vegetables. Add the zucchini and onion first then when they are cooked about half way add the bell peppers
Step 5
When chicken is cooked all the way and vegetables are softened and rice is done. Add rice to the bowl and then your chicken and veggies on top
Step 6
You can add corn, salsa and Chimichurri after if you want it is completely optional
