finely diced
3 Tbsptomato paste
water down
2 tspmix powder
or mild madras curry powder
1 tsphot chilli powder
extra, depending how hot you like
1green chilli
¼ tspsalt
1 tspmethi
2 tspmango chutney
1 ½ tspsugar
lemon juice
optional
2 tsptamarind sauce
2 Tbspgarlic ginger paste
coriander
cinnamon

Instructions
Step 1
Cover bottom of pan with veg oil, bring to medium heat, add onions and soften
Step 2
Add cinnamon and green chillies, fry for a couple of minutes
Step 3
Add ginger and garlic paste and cook out
Step 4
Add spices, methi first, cooking out then powders and salt
Step 5
Once fragrant add tomato puree and water. mixture cooking out to masala base
Step 6
Add a little base gravy at a time, reducing then adding again
Step 7
Add chicken to cook (more base gravy if raw)
Step 8
Mango chutney, tamarind (1/3 measure if concentrate)
Step 9
Reduce and cook chicken through adding gravy if needed
Step 10
Serve with coriander
