0.25 lbBeef tripe
0.25 lbbeef cube
2smoked mackerel
1 tablespoonginger
2 tablespoonsshrimp powder
2onion

2tomatoes
medium
1red habanero pepper
4hot pepper
for garnish
2fresh okra
medium, head and tail removed, It is optional but my dad loves having it in the soup

medium, sliced, for garnish
2 teaspoonssalt
to taste
2 tablespoonsBouillon
or Lanhouin
1 teaspoonblack pepper
2 cupspalm nut concentrate
Instructions
Step 1
In a bowl pour the pounded palm nut add the boiled water.
Step 2
Transfer into a strainer the finer the better until you obtain a golden liquid without impurities.
Step 3
On a medium heat bring the golden liquid to a boil.
Step 4
Add the fresh onion, red habanero, fresh tomatoes, let it cook for 5 minutes
Step 5
Remove the vegetables and puree them in a food processor.
Step 6
Pour the mixture back into the soup.
Step 7
Add powdered shrimp, ginger paste and Lanhouin/ your bouillon cube
Step 8
Add all meat but the smoked mackerel as it is soft
Step 9
Cover and let it boil for about 10 minutes
Step 10
Add salt and the smoked mackerel
Step 11
Let it boil for about 3 minutes
Step 12
The soup is ready when red oil appears on the surface of the soup
Step 13
Add the black pepper and the fresh vegetables
Step 14
Let it simmer for 5mins
Step 15
Remove and serve over rice, foufou, ablo or as is.
