Steak Sandwich

A good steak sandwich is unbeatable, and for me, it's at its best when made with a really tasty cut of beef, such as onglet, otherwise known as hanger steak. This less well-known piece is sometimes called the butcher's cut, supposedly because it is so good that the butcher always keeps it for himself! I urge you to wrestle it off your local butcher and try it in this excellent sandwich.

Instructions

Step 1
Place a griddle (grill) pan over a high heat.
Step 2
Put the mayonnaise into a small bowl and stir through the mustard and Tabasco.
Step 3
When the griddle is smoking hot, brush with a little oil. Season the steaks all over with salt and place on the griddle for 3 minutes.
Step 4
Discard the mushroom stalks, then place the caps on the griddle pan beside the steak. Allow to cook for 4 minutes, turning occasionally.
Step 5
Peel the onion, slice into rings 5mm thick and place on the griddle to fry.
Step 6
Flip the steaks and cook for a further 3 minutes. Preheat the grill (broiler) to high.
Step 7
When the onion is cooked, transfer it to a small bowl and dress with the Worcestershire sauce. Put a plate on top of the bowl so they keep cooking.
Step 8
Roughly chop the thyme on a board and place the steaks on top to rest.
Step 9
Deglaze the griddle with the Guinness (if using) and add this liquid and the mushrooms to the onions. Stir to combine.
Step 10
Meanwhile, slice the ciabatta in half lengthways and place under the grill to toast.
Step 11
Once toasted, spread each side with the mustard mayonnaise.
Step 12
Roll the steak in the thyme and season with pepper. Slice and place on one side of the bread, then spoon over the mushrooms and onions. Top with the watercress, blue cheese (if using) and the other piece of bread and slice in half before serving.
