Ingredients

1 ½ tspcoconut oil
1red onion
peeled and finely chopped
160gcauliflower florets
210gpotatoes
peeled and diced
1garlic
clove, peeled and crushed
20gginger
peeled and grated
½ tspturmeric
½ tspmustard seeds
72 tspground cumin
1 pinchchilli powder
160gchopped tomatoes
tinned
60gfat-free yoghurt
greek or natural
salt
pepper
1 bunchcoriander
small, chopped
2poppadoms
Instructions
Step 1
Step 1 Heat the coconut oil in a deep frying pan over a medium heat, add the onion and fry for 5 minutes until soft.
Step 2
Add the cauliflower and potatoes, fry for 3-4 minutes until golden then add the garlic, ginger and spices.
Step 3
Fry for a minute then add the tomatoes and protein powder.
Step 4
Add a splash of water then cover and simmer gently for 10-12 minutes until the potato and cauliflower are tender.
Step 5
Season to taste.
Step 6
Remove from the heat, stir in the yoghurt and coriander and serve with the poppadoms.
