Ingredients
8 servings
2 TbspBacon Grease
or 4 slices of bacon cut into 1" pieces
1red onion
large, chopped
1red bell pepper
chopped
3 clovesgarlic
finely diced
3 cupssmoked beef brisket
leftover, cut up into 1-inch cubes
3 tablespoonschili powder
1 tablespooncumin
½ tablespoonsmoked paprika
1 x 12 ozbeer
bottle
½ tablespooncanned Chipotle in Adobo sauce
or the equivalent in dry Chipotle seasoning, adjust amount to your heat preference
1 x 15 ozcan diced Tomatoes
smoked
1 x 15 ozcan tomato sauce
1 x 15 ozcan Black beans
drained, optional
1 x 15 ozcan Kidney beans
drained, optional
15 ozcorn can
drained, 1 cup of grilled corn works good too, optional
1 x 4 ozcan diced green chili
Instructions
Step 1
Heat the bacon fat in a soup pot; add onions and saute for about five minutes
Step 2
Add the red pepper and cook for another minute
Step 3
Add garlic and cook for another minute
Step 4
Add brisket and mix everything together
Step 5
Add all dry ingredients (spices) and mix everything together
Step 6
Add beer; bring to a boil and reduce by a bit
Step 7
Add the rest of the ingredients and mix everything together
Step 8
Bring to a boil, then reduce to a simmer. Cover and let simmer for about two hours.
