Step 1
In a large bowl mix the lamb pieces, lemon juice, turmeric, soy sauce, 2 tbls of oil and cracked black pepper together and leave marinate for 2 hours.
Step 2
In a non stick pan, heat oil and add fenugreek and fry until it turns dark. Add mustard powder.
Step 3
Transfer marinated lamb pieces to oil and brown it well over high heat.
Step 4
Lower the heat to medium and add garlic, ginger, and fresh chillies, stir well. Cook until the lamb is tender periodically adding lamb stock to moisten and prevent burning.
Step 5
When the lamb is tender add peas and stir for several minutes. Just before turning off the heat add spring onions and 1 tsp black pepper.
Step 6
Adjust seasoning with salt. Drain out excess oil and serve with rice.
