Ingredients

1jalapeno
cut into halves
1red onion
cut in half 1-half thinly sliced
1 tablespoonfresh lime juice
1 pinchsugar
kosher salt
1avocado
ripe, halved
¼ cupcilantro
finely chopped
1 ½ tablespoonlime juice
½ teaspoonsalt
½ cupbarbecue sauce
1 tspchipotle in adobo
chopped
½ tablespoonadobo
4portobello mushroom caps
gills removed
8corn tortillas
warmed
3radishes
thinly sliced
¼ cupCotija cheese
crumbled
Instructions
Step 1
Thinly slice ½ of the jalapeno, red onion into a small bowl add fresh lime juice, sugar and salt tossed to combine. Set aside. Finely chop remaining jalapeno and add to a medium bowl, add an avocado, cilantro, lime juice, salt, mash until creamy.
Step 2
Heat broiler. In a bowl stir together barbecue sauce, chipotles in adobo plus adobo sauce.
Step 3
On rimmed baking sheet place 4 portobello mushroom caps, cap side down. Broil for 5 minutes, flip and brush caps with adobo glaze broil 2 to 3 minutes forming brown spots. Brush with glaze and move to cutting board and slice.
Step 4
Serve on warm tortillas with avocado, radishes, pickled onions, jalapenos and cheese
