1 packagefirm tofu

½ cupshiitake mushrooms
chopped

½ cupnapa cabbage
chopped

2 ozgreen onions
sliced

½ tspginger
grated

½ tspgarlic
grated

1 Tbspsoy sauce

1 Tbspsesame oil

1 tsprice vinegar

¼ tspblack pepper

½ tspsugar

Instructions
Step 1
Finely chop shiitake mushrooms.
Step 2
Chop napa cabbage. Add half tsp salt to the cabbage, and wait 20 minutes to release the moisture.
Step 3
Next slice tofu, cover it with paper towels and press it with a heavy pan to release moisture.
Step 4
Crumble the tofu in a large bowl add the drained cabbage, mushrooms, green onions, ginger, garlic, soy sauce, sesame oil, rice vinegar, black pepper, sugar, and corn starch.
Step 5
To assemble wonton wrappers spoon a little bit of filling and squeeze to create a pocket. Then take both ends and fold them together and pinch to seal.
Step 6
Boil in vegetable broth until wontons float add bok choy.
Step 7
Serve with chili oil.
