Easy homemade Korean Black Bean Sauce Noodles aka. Jjajangmyeon! Traditionally, it's cooked with pork meat, but I skipped it this time and used spaghetti instead of traditional noodles. Living abroad, I know it is hard to get the "authentic" ingredients, so I love to use what is available :)

Instructions
Step 1
1) Start by chopping cabbage, onion, and carrot into bite-sized pieces.
Step 2
2) Cut scallions into slices and dice garlic cloves.
Step 3
3) Heat a frying pan over medium heat and add 6 tbsp of neutral oil.
Step 4
4) Add the black soybean paste and gently stir for about 3 minutes.
Step 5
5) Remove the soybean paste from the pan and transfer it into a separate bowl.
Step 6
6) Stir-fry garlic and scallion in the same frying pan until fragrant.
Step 7
7) Add onion, carrot, and cabbage. Season with sugar, black pepper and add crushed ginger.Stir-fry 5–7 minutes over medium heat.
Step 8
8) Add the black soybean paste and the chicken stock. Stir well.
Step 9
9) Mix cornstarch with water and add the mixture to the pan at a time while stirring.
Step 10
10) Take off the heat and cook noodles according to instructions.
Step 11
11) Serve with sliced cucumber or fried egg or both! Enjoy ❤️
