½ tablespoonoyster sauce
½ tablespoonmushroom powder
½ tablespoonbaking soda
½ tablespoonChinese vinegar

Instructions
Step 1
Cut lamb into bite size. In a bowl of cold water add baking soda, and wash cut lamb in baking soda water for a few minutes. Remove washed lamb from water and drain excess water. Marinate lamb in Chinese cooking wine and sesame oil. (将羊腿肉切至薄片。在清水中加入小苏打,加入羊肉清洗3分钟。将羊肉捞出沥干水分后加入芝麻油和料酒腌制5分钟。)
Step 2
Heat skillet over high heat, add avocado oil. Add marinated lamb and ginger to the skillet, cook lamb for 3-5 minutes until pink-red color, and a little bit of salt to the lamb. Remove lamb from heat and set aside. (起锅烧油,在锅中加入羊肉和姜,煸炒5分钟至肉变粉红色,加入少许盐。将羊肉盛出备用。)
Step 3
Cut bell peppers, green onion and red onion into bite size. Heat skillet over high heat, and add avocado oil. Add green onion, minced garlic, red onion and bell peppers in order and stir fry in between adding materials. Stir fry for 10 minutes, add 1/2 tablespoon soy sauce to the mixture if pan is too dry. (将青红灯笼椒、小葱和红洋葱切小块。起锅烧油,依次加入切好的蔬菜和蒜末,每加入一样食材在锅中翻炒几分钟。待所有食材都加入锅后继续煸炒10分钟,期间如果锅烧的有点干可以加入一勺酱油。)
Step 4
Add prepared lamb back to the skillet and stir fry for 5 minutes. Add soy sauce, oyster sauce, and mushroom powder to the mixture and stir thoroughly. Add Chinese vinegar to the contents once contents are ready to be removed from heat. (将半炒好的羊肉回锅,在煸炒5分钟。加入蚝油、酱油和蘑菇粉,搅拌均匀。加入一勺香醋混合均匀后即可出锅。)
