Step 1
Press your tofu,
I do this by cutting my block into easy to handle chunks and firmly squeezing out the water. I have recently come across a tofu press on amazon for $30 that you can you to make and preserve your tofu !
Step 2
Marinate your tofu with your soy sauce, mustard, seasonings and set aside.
Step 3
Saut'e your diced onions and peppers and then add your tofu and cook on medium heat for about 20 minutes.
Step 4
Some of these ingredients may same strange but the key to a good tofu scramble is pressing out as much water as you can so it can marinate and soak up all the seasonings and love you put into it. The longer you marinate it the more flavorful it will be.
