Chilli Con Carne

This is my take on chilli con carne - simple, fresh and tasty! Great with some creme fraiche, coriander and extra lime juice on top! For the beer - ideally Corona, but any lager will do.

Instructions

Step 1
Heat 1 tbsp. oil in a large pan. Add sliced onion and cook on low heat for a few minutes or until soft. Add garlic and chilli and cook for 2 minutes more. Turn up heat and add the mince and brown. Add the spices, chopped tomatoes, corona, lime juice, coriander and beef stock. Simmer down for about an hour, until liquid is almost gone (or simmer for longer to mature flavour more and top up with water). Add kidney beans for the final 15 minutes. Final taste at the end - and add more of the spices if needed. Serve over rice, topped with fresh coriander, lime wedge and creme fraiche.
