ONE PAN BACON & EGG HASH 🍳 It’s Day 5 of Part 5 of my ‘How to make 5 meals from a £25 shop at Aldi’ series. This meal came in at around 70p per portion and honestly once you’ve tried it you’ll wonder why you only really eat bacon and eggs for brekkie, this is the perfect summers day dinner, breakfast, brunch, lunch - basically it’s delicious always 😇 So, does anyone else LOVE breakfast for dinner on a hot day?! Please don’t say I’m the only one!! 😅 Anyway, give this recipe a CRACK, give it a save and enjoy! 💜

Instructions

Step 1
1) Heat up the oil in a large frying pan on a medium heat then add your diced potatoes. Allow to cook for about 20 minutes, until the edges start to go golden. Stir every so often. 2) Add in the bacon and mix it in, allow to cook for a further 5-10 minutes until the bacon starts to crisp up. At this point your potatoes should be cooked too. 3) Make four gaps in the pan, and crack in four eggs, and sprinkle over the mozzarella - fry until the eggs are cooked - I always cover the pan with a lid as this helps the eggs to cook quicker. 4) Finish with a sprinkling of spring onion greens. Serve up straight away with a salad or just like that! TIP: season the potatoes with not just salt & pepper but some smoked paprika or a little chilli gives the dish an extra kick!
