Ingredients

2 tablespoonsolive oil
1onion
large, diced
2serrano pepper
diced
4 clovesgarlic
minced
1 teaspoonsalt
1 teaspoonchili powder
1 teaspooncumin
1 teaspoonsmoked paprika
½ teaspoonmexican oregano
½ teaspoonsriracha
cinnamon
optional
1 tablespoontomato paste
1 x 14.5 ozdiced tomatoes with chilis
can
1can black beans
drained and rinsed
6 cupsStock
1 cupfrozen corn
1 poundboneless chicken breast
1 tablespoonlime juice

Instructions
Step 1
Sautée the onion, chilis, salt and spices in the olive oil. Once soft and fragrant, add the garlic and tomato paste.
Step 2
Cook for 1-2 minutes and then add the tomatoes, black beans, stock and corn. Bring to a simmer and add the chicken.
Step 3
Cook for 20-30 minutes. Remove the chicken and shred it. Add the lime juice to the soup.
Step 4
To serve, add the chicken to the bowl. Then add the soup to the chicken. Top with your favorite condiments. Snuggle up and enjoy.
