Step 1
Beat eggs in a bowl and season with salt, pepper, and turmeric. Set aside. Heat oil in a pan. Add chopped scallions and cook about 1 minute. Add chopped ham and garlic. When ham is heated through add spinach and cook until just wilted. Pour eggs in pan and scramble until cooked to your desired doneness adding cheese in about halfway through the cooking time. Remove from pan and top with the avocado cut up into pieces.
