Ingredients

3 tablespoonsvegetable oil
1yellow onion
chopped
1 headcauliflower
small
3potatoes
same amount as cauliflower
1 x 14 ouncecan of coconut milk
1 x 14 ozcan chickpeas
1 cupfrozen peas
1 cupvegetable broth
3 tablespoonstomato paste
3 tablespoonsnutritional yeast
2 tablespoonshoney
or maple syrup
1 tablespoonminced ginger
2cloves garlic
minced
1 teaspoongaram masala
1 teaspoonturmeric
1 teaspoonmustard seed
1 teaspoonsalt
¼ teaspoonred pepper flakes
black pepper
2 cupsbasmati rice
uncooked
Instructions
Step 1
In a large saucepan on medium-high heat, heat oil and sauté onions and garlic for 5 minutes
Step 2
add all remaining ingredients and bring to a boil
Step 3
lower the heat, cover, cook until veggies are tender (30 minutes)
Step 4
Serve with Naan or on rice
