Instructions
Step 1

In a pan, add cooking oil, mustard seeds, cumin seeds, and hing.
Step 2

Peel and chop potatoes in small cubes.
Step 3

Once the mustard seeds begin to crackle, add the chopped potatoes to the pan. Add all the spices as listed, along with salt and (optional) sugar, as per taste.
Step 4

Keep a lid on the pan and fry well on low flame for 5-10 mins. Keep stirring in between. If needed, sprinkle water in between if the potatoes begin to harden too much. The final consistency will be crispy. Serve hot with roti.
